Thanks to its commitment and actions, Casa Nova has been recognized with a Green Star from the Michelin Guide for the fight against climate change.
Sustainable projects
Andrés Torres, the chef behind the Casa Nova restaurant, has been instilling sustainability for more than 30 years through work with indigenous communities in Guatemala. With a philosophy of “use what you get and give back what’s left“, Torres focuses on local sustainability. He grows ingredients directly at the restaurant and, what he cannot grow, he buys from collaborating neighbors.
His restaurant operates on solar energy and collects rainwater in reused wine barrels for irrigation. Torres does not use pesticides, opting for insect hotels that control pests naturally. In addition, he promotes the protection of bees, producing rosemary and lavender honey at home.
Casa Nova is not just a restaurant; it is a platform to generate environmental awareness. Torres interacts with customers, sharing his travel experiences and the origin of his dishes, inspired by expeditions with NGOs and interaction with indigenous communities.
Basic elements of the food, such as the potato, take center stage on their menu, valuing the rich culinary tradition of Peru and Bolivia. In this sense, Casa Nova has earned a Green Star from the Michelin Guide, recognizing its commitment to sustainability and the fight against climate change.
